Mini Chocolate Cake

Mini Chocolate Cake with Almond

This is a moist cake and delicious chocolate cake with the crunch of the toasted almonds around the side. It is iced on top with chocolate frosting rosettes and the middle mocha buttercream icing rosette with almond. Perfect for  any party time or dessert.

 


Ajantha Cakes/Mini Chocolate cake

Chocolate cake surround a chocolate icing, center of the cake coffee mocha icing with almond,bottom toasted almonds and a powdering of icing sugar.
                                                


Coffee mocha icing (make 6 servings):

1 1/2-2 cups confectioner's sugar(icing sugar)
2tbs and 2tsp cup unsweetened cocoa powder
2tbs and 2tsp strong hot, brewed coffee
2 tbs and 2 tsp melted butter
1/2 tsp vanilla
1/8 tsp salt

Method:

  1. In an electric hand mixture, beat melted butter, icing sugar for 3 minutes.
  2. Add cocoa powder, coffee, vanilla and salt, blend all combine well. 
  3. Beat well until frosting reaches a good spreading consistency. 
  4. Using star tip, put mocha icing, center of each cake.

Using a round cookie cutter, trim off the Chocolate cake, then applying a star tip with chocolate icing edge of the cake.Using star tip, put mocha icing, center of each cake.Surround the cake, frost chocolate icing, spread almond flakes.Spread some icing sugar on top of the cake.
