Blueberry, Oatmeal Microwave Mug Cake



I have made so many muffins and cakes. But blueberry is one of my favorites.
Last week I made this blueberry, oat mug cake in the microwave. Our family had a cup of cake with evening tea. It is very easy to make and healthy too.





Ingredients

  • 1 tbsp butter
  • 1 cup rolled oats
  • 1 tbsp all purpose flour
  • 1 tbsp melted butter
  • 2 tbsp brown sugar
  • 1/2 cup milk
  • 1 tsp cinnamon powder
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp vanilla
  • 12 blueberries

Directions:

1. In a medium microwave save bowl, add all ingredients (except the blueberries) and mix until just combined with a fork. Gently stir the blueberries on top.
2. Place in the microwave on high for 2 minutes. Make sure when you touch, if it is still a little moist on top, place it back in the microwave for a further 1 minutes.
3. Cool for about 5 minutes. Loosen the edge of the cake to use a knife.
4. Transfer from the bowl/mug and turn out on to a mug/ cup and serve.
5. Enjoy.
